The step-by-step

  • First, you have to microwave the chocolate. Put the chopped pieces of dark chocolate in the microwave-safe bowl. You want the microwave at about 25% power for 15 seconds. Once the chocolate’s nice and melted down, you stir it. Do this five times or until almost all of the chocolate has melted. Let it cool for about a minute, stirring occasionally to make sure you get a nice, smooth consistency.
  • Lined your baking dish with parchment paper then start pouring the chocolate in. At this point, there should be no sizeable solid chunks in the chocolate. If there is, you may want to microwave it once more. Spread the chocolate out so you have a flat, even surface.
  • Now it’s time to top it off. As the recipe suggests, pistachios and dried cranberries work a treat, but you can customize it even further if you like or use different toppings altogether! Some people like to add coconut flakes (especially good for a festive looking frosting) or a few pinches of coarse sea salt to make it even more flavorful.
  • To help it set, you can either cool it in the fridge for about 20 minutes or you can freeze it for five to ten minutes if you’re in a hurry to serve it or wrap it up. A sharp knife can quickly break it up. You want about fifteen pieces, but don’t worry if they’re not all the same shape of completely even in size.
